February Recipes: Enjoy Hearty Mashed Potato Casserole and Pasta e Fagioli Soup This Month
Can we all agree that we’re over the cold weather? Since there’s not much we can do about the temperatures, I decided to suggest two of my favorite dishes to warm everyone up this month. This loaded mashed potato casserole is hearty, savory, and the perfect way to jazz up regular mashed potatoes. And my pasta e fagioli soup is always a go-to when it’s cold outside and we want to feel warm and cozy.

Loaded Mashed Potato Casserole
32 oz. refrigerated, ready-to-serve mashed potatoes
1/2 stick butter, softened
3 oz. pack of real bacon bits, reserving 1 tablespoon
3-4 green onions chopped, reserving 1 tablespoon of green tops
1 cup sour cream
2 cups shredded cheddar, reserving 3/4 cups
Preheat oven to 350 degrees.
In a large bowl, combine all ingredients, reserving 1 tablespoon of green onion tops, 1 tablespoon bacon bits, and 3/4 cups cheddar cheese.
Once well combined, put in a 9x11 casserole dish. Top with reserved cheese and bacon bits.
Bake for 30 mins, or until hot and bubbly and cheese has melted.
Sprinkle with remaining green onion tops.
Pasta e Fagioli
1 cup ditalini pasta
2 tablespoons olive oil, divided
1 lb. Italian sausage, casings removed
2 tablespoons minced garlic
1 medium onion, chopped
3 carrots, peeled and chopped
2 stalks celery, chopped
3 cups chicken broth
16 oz. can tomato sauce
1 cup water
15 oz. can petit diced tomatoes
15 oz. can kidney beans, drained
15 oz. can white northern beans, drained
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt/pepper to taste
Cook pasta according to directions, drain, and set aside.
In a large stock pot, cook sausage in one tablespoon of oil until cooked through, breaking up into small pieces as you cook.
Next, add carrots, onion, celery, and garlic to pot with sausage (add more oil if needed) and cook until softened.
Add in chicken broth, water, tomatoes, and tomato sauce, along with seasonings, and bring to a boil. Reduce to simmer, and cook uncovered for 15 mins. Then, add in pasta and beans.
Serve with crusty garlic bread.
